Groovy Food Company Collaboration

So over the next few months I will be bringing you exciting new recipes, in preparation for the upcoming summer Foodies Festivals.

I am doing a few food collaborations with brands I love to use, not just in my baking, but cooking in general. First up is the Groovy Food Company

I love their products and I have been using them for a few years, it started with me using their agave as an alternative to sugar and honey in my bakes.. I love the taste and texture so decided to start using it as my staple sweetener in all of my creations ;-)

When I started to experiment in gluten free recipes I began with "Doves Farm" flour.. this for sweet or savoury dishes, but since the growth and availability of gluten free products and now with the ever-growing vegan trend, the variety of products has also grown. Alternative flours are popping up everywhere Such as Groovy Food's Coconut Flour! So I am making the most of it.. the coconut flour is a naturally sweet addition to my bakes, but more importantly gluten free and vegan!

The first recipe I want to share with you is an easy peasy starter recipe for you. Chocolate and Coconut Gluten Free and Vegan Brownies! Rich and decadent bites of heaven .

Ingredients: (Makes approx. 16 brownie bites)

300g Vegan Dark Chocolate (I use Green and Blacks).

150g Vegan Spread (I use Vitalite)

Egg Replacer (6 eggs worth)

Dash of Lemon Juice

375g Coconut Sugar

150g Coconut Flour

1tbsp Coconut Oil (and some for greasing the tin)

45g Cocoa Powder

1tsp Baking Powder

1tsp Vanilla Extract

Method:

1. Melt the chocolate and butter together and set aside to cool.

2. Mix the egg replacer mixture well, with a dash of Lemon Juice and add the coconut sugar. Whisk well until thickened and combined. To this add the vanilla extract and coconut oil.

3. Fold the egg mixture into the chocolate mixture.

4. Sift in the coconut flour, cocoa powder and baking powder then mix well.

5.Make sure all the mixture is combined and lump free then pour into a greased brownie tin.

6. Bake for 35 minutes at 180 degrees, then set aside to cool.

These brownies take so little time to make, but are so satisfying. Rich, Gooey Naughty Vegan bakes.. who said Vegans have to miss out!

Once you have mastered this why not try experimenting? add chocolate chips, chopped nuts or dried fruit.. or anything you fancy really :-)
