Creative Nature Superfoods Collaboration
So this brand I have been enjoying for a while now, sprinkling their raw cacao into porridge, smoothies or using in my bakes. I love this brand as it allows me to bake naturally gluten free and vegan cakes! Since experimenting with vegan bakes I have used aquafaba and chia seeds as an egg alternative so when Creative Nature Superfoods were willing to provide me with a box of goodies I could not refuse! Cacao nibs, cacao powder, maca powder and chia seeds... the ultimate in healthy or naughty GF vegan bakes!
I am a sucker for chocolate and have such a sweet tooth, so to be able to whip up something quick and easy to take with me to work is great. Brownies, cookies and biscuits are a tea break essential!
I decided to use their products to make Brookies! Yes a cross between a brownie and cookie, because why should you have to choose between them?
This simple recipe is full of chocolate and is delish, just need a cuppa to go with it ;-)
Ingredients: (Makes around 16 Brookies)
260g Self Raising Flour (I use Doves)
30g Cacao
30g Maca Powder
1 tsp Baking Powder
340g Caster Sugar
75g Vegan Chocolate (I use Green & Blacks)
1tsp Vanilla Extract
60ml Veg Oil
120ml Water
Chia Seeds
Coconut Oil
Method:
Preheat the oven to 180 degrees and grease a brownie tin with coconut oil.
Sift the flour, cacao, maca and baking powder into a mixing bowl and add the sugar. Mix all together.
Add a tablespoon of chia seeds.. or more if you want an extra crunch.
Melt the chocolate and add to the mixture along with the vanilla extract.
Add the oil and water to the mixture. (Use a little more if the mixture is too dry).
Bring everything together then transfer into a brownie tin to bake.
Bake for 30-35 mins. You are looking for a crunchy topping with a fudge like gooey centre.
